Twice-Baked Potatoes
8-9 medium-sized potatoes 1 stick real butter 1 package Hidden Valley Ranch dressing mix 2 cups whole milk Colby-Jack cheese Green onions Real bacon pieces Phil Robertson Seasoning
Wash potatoes Poke knife 3-4 times through each potato Place potatoes inside a 1-gallon ziplock bag and cook in microwave until soft (about 20-22 minutes) Cut potatoes in half while they’re hot Scoop out the cooked potatoes (use a hot pad to hold them in your hand) and place in bowl on top real butter Pour ranch dressing mix on top of potatoes Pour 2 cups of milk into bowl and mix on slow speed until potatoes are mixed with other ingredients. Once mixed, turn mixer on high and let the mixture turn into desired creaminess. You may need to add more milk. (Just depends on how you like it and how liquidy you need it if you’re recovering from surgery like me!)
Add desired amount of freshly grated colby-jack cheese, freshly diced green onions and real bacon pieces. For a little kick, add my Papaw Phil’s seasoning! Mix all together and put in a casserole dish. Top with more cheese, onions, bacon pieces and seasoning. Cook on 350 degrees for 30 minutes. Enjoy!
