Hi friends! Mia here! This month I finished summer camp! I was a counselor at Camp Ch-Yo-Ca this summer for eight weeks and loved every second of it! I am so thankful for the Lord's work in me and all the kids who came to camp this summer! Also this month I am just soaking in these last few days of summer with spending time with friends and family! I am just feeling so thankful for all the people in my life. The Lord is so so good isn't He?!! I hope you are all enjoying your summer as much as I am! I love you all so dearly and you are all in my prayers!

JULY  RECIPIENT
Chase is our family comedian, he loves making people laugh. He loves basketball and Minecraft, and he is a wonderful brother to his 3 siblings. He is so brave, an inspiration to us. He’s independent, really smart, and I’ve always said that he acts like a grown man in a child’s body. His next surgery is scheduled for August 4, definitely covet your prayers over him for that. Thank you, Chase's Mom.

!!! New Recipe for the month !!! 
 
We are doing a new recipe each month to help children who are undergoing those tough surgeries! Whether you are on a liquid diet, a soft food diet, or just someone who is always down to try new foods, these recipes are for you!
Mia's homemade Vodka Pasta! 
Well I did not invent it, but I make it so much that it is my specialty! 
Ingredients:
¼ cup olive oil
1 small clove of garlic, diced
¼ green onion
¼ cup tomato paste
½ cup heavy cream
1 tablespoon vodka
1 teaspoon red pepper flakes
8 ounces penne pasta
1 tablespoon butter
¼ cup parmesan cheese
basil, chopped, to serve
salt and pepper to taste

Method:
In a large saucepan, heat the olive oil, garlic and onion. Cook until soft.
Add tomato paste and cook until it appears darker. 
Add in the heavy cream.
Add in the vodka and cook through until evaporated.
Add in the red pepper flakes. Keep stirring until combined.
Season with salt and pepper. Remove sauce from the heat.
Cook pasta separately.
When the pasta is done, save ¼ of the pasta water before draining.
Add in the butter. Stir over a medium heat til the butter has melted. 
Add pasta – and the pasta water – to the sauce.
Add parmesan cheese and stir.
Add more salt and pepper to taste.
Top with a sprinkling of parmesan cheese and basil to serve.

WHERE ARE THEY NOW?

Tabi is from Colorado. She was adopted from Bishkek Kyrgyzstan
and arrived in America just shy of her 3rd birthday. She was born with significant facial clefts, cleft lip and palate and a cleft in her left eye socket. Despite multiple surgeries, including one year in Chicago with a world-renowned eye surgeon, Tabi thrived!  Tabi graduated from high school Magna Cum Laude in May of 2020, and just completed her junior year and the 1st year of her nursing program with a 4.0 at Colorado Mesa University. She has a passion for medicine and is pursuing a degree in trauma nursing. Tabi loves to travel, skateboard, and is an amazing photographer!
