April Reflection 
Hey y'all! It's Mia! This month I finished my first year of college! I am so so sad that it is already over! This year really flew by, and I am so thankful for my new friends and memories that I made. While finals and exams are hard, I would not trade this year for anything! But I am ready for it to finally be warm weather alllllll the time! Let's get this summer started! I love you all and I hope your month of April was sweet!

MEET PENELOPE - APRIL RECIPIENT!

Penelope is such a wonderful bright young girl. She is caring,sweet and beautiful. I’ve never met anyone who has faced as many challenges as her with a big smile on her face. Penelope is a blessing to those around her and always willing to help.  She enjoys being outside, reading comic books and playing with slime. Please pray for Penelope as she is preparing for bone graft surgery later this year. ~ Penelope's Mom

!!! New Recipe for the month !!! 
 
We are doing a new recipe each month to help children who are undergoing those tough surgeries! Whether you are on a liquid diet, a soft food diet, or just someone who is always down to try new foods, these recipes are for you!
Homemade Mac & Cheese 
Ingredients:
1 package (1 pound) large elbow macaroni 
1 stick plus 1 tablespoon (9 tablespoons) butter
Salt and black pepper
9 Tablespoons all-purpose flour 
3 cups milk
2 cups shredded cheddar cheese

1. Heat the oven to 350 degrees Fahrenheit. Cook the macaroni according to package directions.
2. While the macaroni is boiling, melt the butter in a separate saucepan on medium heat. Add salt and pepper and the flour, stirring continuously. When thoroughly combined, slowly stir in the milk. Stir until it thickens, then turn off the heat. 
3. Drain the macaroni and pour into the casserole dish. Cover with sauce. Add 1/4th cups of the cheese and mix all together. Sprinkle the remaining cheese on top.
4. Bake until the cheese has melted and the macaroni is hot. 
ENJOY!!!

Scarlett is 3 years old and became a part of the Mia Moo family just shy of turning one. Since then, she has undergone over 13 surgeries from multiple palate surgeries to a jaw distraction to save her life. She is truly a walking miracle. She continues to beat every obstacle that is put in front of her. She has a testimony that has already touched so many lives. Being a part of the Mia Moo Family has been such a blessing for our family. The Mia Moo Foundation has given Scarlett a community of kids like her that she can relate to and feel welcomed.
